Anyone got advice on cooking the acorn squash that B bought by accident? Preferably in low grease/butter way since B can't handle too much of that.




As for a tuna recipe, B had some tuna steaks that he'd bought but wasn't excited about because "it always ends up tasting like canned tuna". So I got creative.


Take a lime (I used one lime per steak to make sure it soaked in) and put on steaks to marnate about 20 minutes. I also added cilantro and oregano to one side as well as some basil infused olive oil (if you don't have any, just add a little of both). Preheated oven to 350.

I'm not sure how long the steaks cooked, but it was probably 10 minutes on each side. I added cilantro, oregano, and basil to the side that didn't get any during marinating. Cook until it's done the way you like (I don't like any left over pink so it's about medium well - chef's cry when I ask for this because it's sacrilege apparently).

I served with brocolli (surprisingly good w/ lime rather than lemon) and lemon pepardelli egg pasta from Trader Joe's. B really liked it :)

Cut it up into cubes, ditch the seeds and the rind, and saute the cubed squash in olive oil and garlic. Yum!
